Crunchy or Chewy Anzac Biscuits? How to Bake This Classic 100 Year Old Recipe
Do you love them crunchy or chewy? Here's how to bake the perfect Anzac biscuit! The origins of the Anzac biscuit date back to World War I, associated with the Australian and New Zealand Army Corps (ANZAC) and is claimed to have been sent to soldiers by their wives due to their long shelf-life.
The biscuits kept well during the long trips abroad and the ingredients didn’t spoil making them perfect to send during the long transportation times back in the day. Today, the biscuits have become a part of Australian culture and the recipe has been passed down for generations.
Viral sensation and home cook @cookingwithayeh has shared a video on TikTok which has quickly become popular with viewers, as she reveals how to get the perfect crunchy or chewy biscuit, depending on your preference. "Today we’re making a 100-year-old recipe,” she says. Her recipe and method in the video are as follows:
"Starting with melted butter and golden syrup, add a dash of baking soda to water and mix it through. Next, you’ll need Uncle Toby’s rolled oats with some plain flour. Add caster sugar and coconut before pouring in that golden liquid. Roll them into balls and place them on a baking tray, flattening them out. Then bake for 12 or 15 minutes if you like them crunchy like me."

- 1 ¼ cups of plain flour, sifted
- 1 cup Uncle Tobys Traditional Oats
- ½ cup caster sugar
- ¾ cup desiccated coconut
- 150g unsalted butter, chopped
- 2 tablespoons golden syrup
- 1½ tablespoons boiling water
- ½ teaspoon bicarb soda
- Preheat your oven to 170°C
- Combine the plain flour, rolled outs, caster sugar and coconut in a large bowl
- Melt butter with golden syrup in a small saucepan
- Mix bicarb soda with the 1 1/2tbsp of boiling water and then mix into the golden syrup and butter mixture. Remove from the heat as the mixture will bubble as you stir.
- Combine wet mixture with dry ingredients and mix, roll into balls (tablespoons) and flatten out on a lined baking tray.
- Bake for 12 minutes for a chewy biscuit. Or 15 minutes for a crunchy biscuit.
